Tonight's dinner:

1.3 lb meatloaf mix
1/2 cup bread crumbs
1/2 cup (or more) chopped onion
1/2 cup (maybe) chopped green pepper
1/3 of a cup (give or take) fine-chopped parsley
1/4 cup soy sauce
1 large egg
2 cloves fine-chopped garlic
1/2 tsp thyme
1/2 tsp black pepper
1/2 cup (give or take) ketchup (the answer to "but what if I don't have chili sauce in the house?")

Preheat oven to 350 F. Mix everything except the ketchup, shape into a nice loaf-ish shape. Dump ketchup on top in a sauce-like way. Usually this gets stuck in a 13"x9" baking pan, but since I don't have one, I lined my 9"x9" brownie pans with tin foil, split the loaf and had two. Baking instructions were for one hour, but since I had smaller loaves, I only cooked it for 50 minutes. At the end of 50 minutes, cool and chow down. Add ketchup as necessary. I thought this was heavy, but I think meatloaf is supposed to be. The onions and green peppers need the sort of fine-chop TLC the parsley got; possibly they also need to be sauteed first. Finally, next time I do this, different sauce, with more heat. Ketchup covers many sins, but it's not spicy, and it's not a sauce.
